A cake to die for!

Many of you had commented on a cake I made awhile back and I just made it again the other day for my sister-in-laws wedding shower, so I thought I'd give you all the recipe. It is very easy and it tastes 100% better than the box cake.

Triple Lay
er Chocolate Mousse Cake

1 3/4 cups flour
2 cups Sugar
3/4 cup Cocoa
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1 cup milk
1/2 cup oil
2 tsp. vanilla
1 cup boiling water

Heat oven to 350 degrees. Grease and flour 3 (8") baking pans. In a large bowl, combine all dry ingredients. Add milk, oil and vanilla; beat at medium speed for 2 minutes. Remove mixer beaters and stir in boiling water by hand. Pour into pans and back at 350 degrees for 30-35 minutes. Completely cool before frosting.

Chocolate Mousse:

1 Envelope Knox Gelatin
2 Tbsp. Cold water
1/4 cup boiling water
2 tsp. vanilla
1 cup sugar
1/2 cup cocoa
2 cups chilled whipping cream

Chill mixing bowl and beaters in freezer before use. Sprinkle gelatin over cold water-let stand 1 minute. Add boiling water and stir until clear-let cool 10 minutes. In Chilled mixing bowl, blend sugar and cocoa, add whipping cream and vanilla. Beat at medium speed-beat until stiff. Pour in gelatin and beat until blended. Fill and frost layers- Refrigerate at least 1 hour.

There you have it, my famous cake! Yummy!

Thx for the recipe. I tend to mostly do box cakes but this one sounds like something I could try.

That sounds so yummy. I know I would find a way to mess it up though. Can you just make me one and send it my way?? HAH!! I guess I could at least try it right? How bad could I mess it up?

oh and i just wanted to tell you that you dont need to try to get an H for that bow holder i won all that time ago.... I had another blogger make one for me and I already got it, so thanks anyways!
