Great Recipe

I made the recipe the other night for dinner, and it was a big hit. It was easy {which I love easy dinners}, it tastes good and the kids ate it!

Velveeta Cheesy Chicken Rotini

1 lb. Chicken Breasts-cut up into 1" pieces
2 1/4 cups water
3 cups Rotini pasta-uncooked
1 pkg. (16 oz.) frozen broccoli/cauliflower/carrot frozen blend
1 can (10 oz.) Rotel-Diced tomatoes and green chilies (drained) {This can usually be found by the tomato sauces in the grocery store}
1/2 lb. (8 oz) Velveeta-cut into 1" cubes

Cook and stir chicken in a large skillet, with some oil in the bottom of the pan. Cook in med-high heat for 6 minutes. Stir in water. Bring to a boil. Add pasta; stir. Cover and simmer on medium-low head for 10 minutes, or until pasta is tender.
Add remaining ingredients; stir. Cook, covered, 9-10 minutes or until Velveeta is completely melted and veggies are crisp-tender. Stir frequently. Enjoy!

That recipe looks delicious. I wrote it down. I'm ALWAYS looking for easy stuff that Ethan can eat (we tend to eat a lot of red-based spicy foods that he can't quite handle yet), so this should really be great!
