Food Fixing FRIDAY!

Chicken Parmesan
(I just made the chicken for dinner this time)

4-5 chicken breasts
2/3 cup of bread crumbs
1/3 cup grated parmesan
2 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. salt
1/8 tsp. pepper
1 egg-beaten
2 Tbsp. milk
1/2 cup flour
4 Tbsp. oil- for frying
3 cups pasta sauce
1 1/2 cup shredded mozzarella cheese
1/3 cup grated parmesan cheese

Rinse chicken and dry with paper towel. Put chicken in a plastic bag and use a mallet to smash the chicken to 1/3 inch thick. Combine the bread crumbs, parmesan, basil, oregano, salt and pepper in a shallow bowl. Stir to mix. Beat together milk and egg in a separate bowl. Set both aside. Spread the flour on a plate. Arrange in an assembly line: chicken, flour, egg mixture, crumb mixture, empty plate. Heat oil in skillet on med-high. Dip chicken through all and put in skillet. Fry each side for 3-5 minutes. Turning once. Heat oven to 375 degrees. Oil a 9x13 pan. Pour 2 cups of pasta sauce into the pan. Add chicken. Pour remaining sauce on top. Add cheese on top and cover with tinfoil. Bake 20 minutes.
Eat with choice of cooked pasta.
