I woke up to snow this morning. The hubs is still out of town, on to day 4, so I got out and shoveled the driveway!
All I could think about was easy soup in the crock pot for lunch.
Thus I bring to you...
What you'll need:
- 5 lbs of potatoes, washed
- 1 medium onion, chopped
- 10 cloves garlic, chopped
- 8 cups chicken broth
- 2 packages of cream cheese
- 2 cups shredded medium cheddar cheese
- 3 tsp. salt
- 3 tsp. pepper
- 1 lb. bacon - cooked and crumbled
- extra cheese for topping
- Sour cream for topping
(I cut the recipe in half, since we aren't very good at eating leftovers)
Peel potatoes and add them to the crock pot.
Add the Chicken broth, onion (I used minced onion, since my family isn't big on onions) , and garlic.
Cook for 6 hours or until potatoes
are tender.
Remove the soup and put into a blender. Blend with the
cream cheese and return to pot.
(I had to do two blenders full)
Return to crock pot and add a little bit of water, if it is too thick for your liking
Add cheese and mix well!
Put your bacon and extra cheese in bowls for topping on your soup.
Pour yourself a bowl and enjoy!
This soup freezes really well too.
Simply freeze in a freezer bag once
cooked and cooled, then thaw and reheat in the crock pot or stove top.
