Taco Bake
What you'll need:
1 package taco seasoning
2/3 c. water
3/4 c. sour cream
1 1/2 shredded cheddar cheese-divied
8 oz. of Velveeta
1/4 cup milk
3 Tbsp. butter
1 c. salsa
3/4 box of elbow maccaroni
1/2 c. crushed tortilla chips
Preheat the oven to 400*.
Brown the ground beef. Once it is cooked, add the water and taco seasoning and simmer on low for 5 minutes. Set aside.
Cook macaroni according to box. Place milk and butter in a sauce pan on medium heat. Once they are melted, add the cooked macaroni, Velveeta and 1/4 cup of the cheddar cheese, stir till the Velveeta is melted.
Add the sour cream and mix well!
Grease a 8x8 pan. Layer the meat, then the macaroni, then about 3/4 cup of the cheddar cheese.
Repeat this twice, ending with the remaining 1/2 cup of cheese. Then top with the salsa.
(My two girls don't like salsa, so I left 2/3 of my dish without salsa)
Cover with tin foil and bake at 400* for 15 minutes.
Take out of the oven and uncover. Add crushed tortilla chips and bake an additional 5 minutes.
